Week 3 (2021)
Alright, here we go. Week 3 completely flew by and I feel great! However, to be honest the week got ahead of me and I missed 2 of my 5 workouts. I’m hoping to double up in week 4 if time permits.
This week I prepared the following dishes:

Monday, January 18th
Breakfast
On Sunday, I baked a dozen Sausage egg muffins for the week and to freeze. Here is the simple recipe! I normally have for breakfast and it keeps me full.
Lunch
I had the Pad Thai for lunch and I honestly think it’s best to have it immediately vs for leftovers because the spaghetti squash gets mushy.
Dinner
I made my go to soup when I’m craving something super savory. The Zuppa Toscana soup is the healthier version of the Olive Garden Zuppa Toscana soup. It has about 6 big servings and I like to save about 1 pint and freeze.
Tuesday, January 19th
Breakfast
So I put wayyyyyyy too much salt in these egg muffins so I ate them with half an avocado. It was so much better 😋
Lunch & Dinner
I was too lazy to cook anything so I had the same thing for lunch & dinner Zuppa Toscana & Pad Thai. 😛
Oh and after my workout… I had this giant yellow apple that was 3 freaking dollars!! 🤯 I didn’t look at the cost when I bought it, but I guess it was pretty dang good! 🤣
Wednesday, January 20th
Breakfast
So I had the same breakfast as the day before, but I added a mandarin orange. (Didn’t want to waste it!)
Lunch
I wasn’t a big fan of the left over pad Thai so I figure I could add a side salad with greek dressing…. it was a bad idea. I ended up just eating the shrimp & chicken 😂
Dinner
I had to redeem my poor lunch so I made the most delicious Asian Steak Salad from Nom Nom Paleo!!

Breakfast
Egg muffin & half avocado - muffins still good & salty! 😂
Lunch & Dinner
I had so much leftover Asian Steak salad, I had to have it for lunch and dinner. I can actually enjoy this every week!
Friday, January 22th
Breakfast
I still had a lot of steak left so I decided to change it up and made steak & eggs with Rick’s avocado sauce. If you guys haven’t tried this sauce…. YOU NEED TO! It’s my friend’s husband’s small batch salsa company here in DFW. They’re currently sold at Walmart, Sprouts & Whole Foods in the DFW area. You can checkout their website here!
Lunch
Finalllllyyy finished the rest of the Asian Steak Salad for lunch!
Dinner
So a few of my friends and I are doing Whole30 so I came over and cooked a nice salmon dinner with mashed potatoes and roasted broccolini. I also made my version of the traditional Thai sticky rice & mango dessert.
Mash potatoes recipe: Boil 1.5 lbs of small gold yukon potatoes for 45 minutes. Drain and add back to pot and mash potatoes with 2 tsp of garlic, 1/2 cup of chicken broth, 1 tbsp of olive oil, 1/2 tsp salt and 1/4 tsp of black pepper
Chia pudding & mango recipe: Mix 1 cup of canned coconut milk with 1/4 cup of chia seeds, 1 tbsp of apple juice and let it sit for 4 hours or overnight. Serve with ripe mangos sprinkled with unsweetened toasted coconut flakes

Breakfast
I was too lazy to cook so I had the last of the Zuppa Toscana soup.
Lunch - skipped bc I got so busy!
Dinner
I’ve been wanting to try Homewood ever since it opened, but they hardly had any available reservations. So I was suplllerrddde excited when my gf said she made reservations for her birthday! Okay, this was a challenging menu to do Whole30 because it’s seasonal and the waiter isn’t well versed on what’s in each food. Here’s how I ordered..
Drink: requested a cucumber & mint smashed water. They didn’t have cucumber so I asked the waiter to make no sugar or unsweetened, alcohol and dairy free mocktail. They ended up giving me a sugar free lavender & lime mocktail.
Appetizer: Greens salad with mustard seed dressing on the side
Dinner: We like to eat family style so we ordered scallops (not cooked with butter), steak (I ended up having to wipe the steak before I ate it bc I felt like there could have been butter on there - not compliant but oh well 😬), and Bolognese that I did not have.
Sunday, January 24th
Breakfast
I had a bottle of celery juice to help cleanse my body. I waited about another hour until I made my big breakfast because I was STARVING! I had some avocados that I needed to use so I pulled out a frozen sweet potato slice to make an avocado toast. You can find the sliced sweet potatoes & breakfast sausage at your local Central Market!
Avocado toast recipe: put one slice of Caulipower sweet potato slice in air fryer @ 400 F for 8 minutes each time or until cooked or desired crisp. Mash a whole ripe avocado, add a splash of lemon juice, sprinkle salt, garlic powder & onion powder to taste. Cook 2 Tribali chicken sausage in pan, remove and then cook 2 sunny side up eggs. Assemble avocado toast & sprinkle everything but the bagel seasoning and you got a big Whole30 compliant breakfast!

Dinner
I meal prepped for the next week so had meatloaf and mashed potatoes!
Thoughts from Week 3
I had to see my doc and had to weigh in and I lost 5 lbs since November! Even though it seems little, I feel that I am significantly slimmer. My size medium clothes are not skin tight anymore! 😂I don’t own a scale so I don’t know how much I weighed before I started this journey. I feel that weight loss shouldn’t be the focus of this diet. I prefer to gage it by how my mind and body feel and how well I fit my current clothes.
Skin update: MY FACE IS SO CLEAR! I can’t remember the last time it’s been this smooth! I barely wore any makeup this week and only put concealer on my acne scars! 1st pic below is after I put on moisturizer and my new fave Tula primer. 2nd pic is a bit of concealer on my acne scars, shaded eyebrows, mascara & eyeliner.
