No Beans Chili (Whole30 & Paleo compliant)

I love chili, but I’m not a huge fan of beans. This recipe does not have any beans & is packed with veggies! It’s perfect when it’s super cold outside and need to use your veggies. I believe this recipe has about 8 servings. I normally freeze half and eat half during the week.

Equipment needed:
Instant pot - 6 qtz Pressure Cooker
Multi-purpose Dicer - this gadget saves me so much time!
Pan - I love this Always Pan
Food Processor - OXO manual processor to quickly mince veggies

Ingredients

Meat:

  • 2 lbs of ground meat (I like to use beef or turkey)

Produce:

  • 1 cup chopped celery (3-4 stalks)

  • 1.5 cups carrots (I used leftover baby carrots

  • 1.5 cups sweet potatoes, peeled & cubed

  • 1 yellow onion, minced/diced (minced with OXO food processor)

  • 1.5 cups zucchini diced (optional - I had extra)

  • 1 ripe avocado to garnish

Pantry:

  • 1 15oz can of tomato sauce or puree

  • 1 28oz can of crushed or diced tomatoes

  • 1 tbsp olive oil

Spices:

  • 2 tbsp chili powder

  • 1 tsp cumin

  • 1 tsp oregano

  • 1/4 tsp cayenne pepper (optional for heat)

  • 1 tsp salt

  • 1 pinch of black pepper

Instructions:

1) Set your instant pot to sauté mode, add oil, ground meat and yellow onion. Cook until meat is brown

2) Add sweet potatoes & carrots and until slightly softened for about 2 - 3 minutes

3) Add tomato sauce and crushed tomatoes, celery, and spices (2 tbsp chili powder, 1 tsp cumin, 1 tsp oregano, 1/4 tsp cayeene pepper, 1 tsp salt, 1 pinch of black pepper) and mix well

4) Set the Instant Pot to manual pressure and set on high heat for 10 minutes

5) While the chili is cooking in the instant pot, saute the zucchini in a pan with a pinch of salt. You will add this once the chili is done. If you add it at the beginning, the zucchini will be too mushy.

6) Once chili is complete, quick release instant pot - use a mitten or wooden spoon to push the release button as the steam will burn you

7) Serve with half an avocado and add additional salt & pepper to taste.

Steps if you do not have an instant pot

1) In a large pot, brown the meat & onions & drain any excess fat and set aside

2) In same pot, add oil, celery, carrots, sweet potatoes and seasoning and cook for about 5 - 7 minutes until softened

3) Add zucchini to pot & cook until slightly softened - about 2 minutes

4) Add back cooked beef, tomato sauce and crushed tomatoes and stir well

5) Bring to boil and let it simmer for about 20 minutes - be sure to stir often
