Cacao Protein Balls (Whole30)

 

Sometimes you just need an energy boost and something sweet! I normally would eat Lara bars when I’m on Whole30, but I have been on a chocolate craving kick so I made these delicious bad boys!

 
 

Equipment needed:
Food processor

Ingredients

1/2 cup raw cashews
3/4 cup raw almonds (unsalted)
1.5 cups of medjool dates (pitted)
1/4 cup 100% dark chocolate cacao powder

optional: toasted shredded coconut flakes to mix in

 
 

Instructions:
1) In a food processor, blend raw cashews (1/4 C), and raw unsalted almonds (3/4 C) until well mixed, but make sure it doesn’t turn into butter. It should still be grainy
2) Add pitted medjool dates (1.5 C) and blend until thicken. It should look grainy & somewhat sticky
3) Add cacao powder (1/4 C) and mix until even
4) Remove the blade and take about a spoon full and create bite size balls/truffles
5) Refrigerate for at least an hour & then serve!
